Beyond the familiar bottles sits a quieter world of wines and wine-based spirits that most drinkers will never encounter. Ratafia from Champagne. Chinato from Piedmont. Fortified oddities, aromatized curiosities, and a handful of things that defy easy categorization.

This class is a guided tour through that territory. Our lead educator and our spirits specialist team up to walk you through what these are, how they are made, and why they have survived in small corners of the wine world while the rest of the market moved on. Expect history, technique, and a few bottles you genuinely cannot find at most retailers.

It is unusual. It is occasionally weird. It is also some of the most interesting drinking we do all year.
