The classic daiquiri is one of the great cocktails: rum, lime, sugar, shaken cold. Simple on paper, and a completely different drink depending on which sugarcane spirit ends up in the shaker. That is the whole premise of the night.
We are pouring a lineup of 2oz daiquiris built the same way each time, with only the base spirit changing. Molasses-based rum from a few different islands. Rhum agricole made from fresh cane juice. Cachaça from Brazil. A few surprise pours from the rest of the sugarcane world. Taste them side by side and you will feel exactly how much the base spirit does to a cocktail that looks like it should be interchangeable. Or add a tasting of just the spirits to real lock in your favorite.
