Volcanic soils show up in wine regions scattered across the map, from the slopes of Mount Etna to the black beaches of Santorini to the lava fields of the Canary Islands. The soils themselves vary widely, but the wines share a certain family resemblance. A savory edge. A saline lift. A kind of tension that is hard to describe until you have a few in front of you.

This intermediate class works through what volcanic terroir actually means and why it shapes wine the way it does. We taste across several regions and grapes so the differences and the shared threads both come into focus. Along the way we cover how volcanic soils behave underground, why they tend to produce lower yields and more concentrated fruit, and how to spot the signature once you know what to look for.
