Spain is one of the great grape treasure chests of the wine world. Somewhere north of four hundred native varieties are still grown across the country, and only a small handful have made the trip onto American wine lists. That leaves a lot of interesting drinking on the table.

A few are being revived by a new generation of growers determined not to let them disappear.
